Abstract

Betacyanin in the dragon fruit plays a role in antioxidant activity. Antioxidants are molecules capable of slowing or preventing other molecular oxidation processes.The study was conducted with Response Surface Methodology (RSM) was used to the optimize pretreatment of dragon fruit peel tea conditions for processing of dragon fruit peel tea using response of betacyanin contents (Y1). This method used three factors of central composite design (CCD) consisting of Na-Metabisulfite concentration (X1 : 0.2-0.4 %), drying temperature (X2 : 65-75 â°C), and drying time (X3 : 4-5 hours). Betacyanin content is determined by extraction of tea using water as solvent. The results showed that the pre-treatment of Na-Metabisulfite, temperature, and drying time were significant for betacyanin content, but not significant for antioxidant activity. Based on the model developed, the optimum conditions for processing dragon fruit peel tea were 0.3 % of Na-Metabisulfite pre-treatment, 70 oC of drying temperature, and 4.50 hours of drying time. These optimum conditions are predicted to obtain betacyanin content of  50.77 %. Thus, it can be concluded that the dragon fruit peel tea is a promising product as a source of antioxidant and betacyanin compounds.
