Potensi Betacyanin dari Daging Buah Naga Sebagai Indikator Kolorimetri dalam Pembuatan Kemasan Pintar Untuk Monitoring Kesegaran Ikan Patin
Abstract
Fish contains very high protein and water that can cause the fish easily degradated. After several decades, the fish freshness can be detected by using intelligent packaging that contains colorimetric indicator. One of the most potential sources of natural color is betacyanin extracted from flesh of dragon fruits. This research is focused on the making of fish fressnesh indicator based on the betacyanin-from flesh of dragon fruits. The surface profile using SEM indicated that PVA was immiscibility on film. During the storage process in the temperature of 4 oC for 7 days there was decrease of quality of catfish meat. This condition can be compared with the change of film colour from pink until colourless. Thus, it can be concluded that betacyanin extract from flesh of dragon fruits can be used as colorimetric indicator for freshness indicator of catfish.  Â
